A bunch of parsley often only lasts a few days in the fridge. Then it goes limp – and ends up in the trash. Herb cubes solve that: you portion the whole bunch at once and get flavor out of the freezer for weeks.

It fits perfectly with freezing meal prep: small building blocks that instantly upgrade sauces and soups.

Step by step

  1. Wash the herbs, spin them dry well (see salad spinner), chop finely.
  2. Fill the ice cube tray: herbs into each cavity, then cover with oil or water.
  3. Freeze until solid. Then move the cubes to a freezer bag and label.
  4. When needed, add 1–2 cubes straight to the pan, pot or dressing.

Label bags with herb and date. Best quality is about two to three months.

FAQ

Can I freeze herbs without liquid?

Yes, but they dry out more easily. Oil or water protects them better.

Do frozen herbs taste like fresh?

For cooking, very much so. As a garnish on the plate, fresh is still better.

Can I mix different herbs?

Yes – e.g. an "Italian mix" of basil, oregano and thyme.

How do I stop the smell from taking over the ice?

Use a tray with a lid or move the cubes to a bag promptly.

Does this work with leftover chopped herbs?

Yes: put chopped herb leftovers straight into the tray instead of throwing them away.
