Breakfast is often the first meal prep sticking point: there's no time in the morning, and toast becomes the default. Silicone egg molds and egg bite muffins turn that around. You whisk an egg mixture once, fill the molds, cook and have portable protein portions for three to four days.

Whether a classic silicone muffin pan, round egg bite molds for the air fryer or flat omelet roll molds – the principle is the same: portion, cook, cool, pack.

Base recipe for egg bites (approx. 6–8)

  1. Whisk 6 eggs with a splash of milk or some cottage cheese, season with salt and pepper.
  2. Add finely diced vegetables: bell pepper, spinach, scallions, mushrooms.
  3. Optional: some grated cheese, diced ham or smoked tofu.
  4. Lightly grease the molds, fill about three-quarters full.
  5. Oven at approx. 325–350 °F (170–180 °C) convection for 15–20 min, or air fryer at approx. 320 °F (160 °C) for 10–14 min, until the center is set.

Let cool, remove from the mold and store in a container in the fridge. To go: lunchbox or small jar – cold or briefly reheated.

Most food-grade silicone molds are dishwasher-safe – check the manufacturer's instructions.

Why do my egg bites stick?

Lightly grease the mold and let them cool completely before removing.

How long do they keep in the fridge?

About three to four days. Frozen, up to two months of good quality.

Can I make them vegan?

With a chickpea flour "egg" or tofu scramble in the molds – adjust the cooking time a little.
